Executive Chef – Jeff Rettig

Chef Jeff has worked in commercial kitchens since he was sixteen years old. A 1990 graduate of the Culinary Institute of America(Hyde Park), Jeff has experience in all aspects of "back of the house" operations. Originally from New Jersey, Jeff worked his way west to Wyoming. Since then, Jeff has owned and operated his own catering business and prior to joining the Calico was the Food Production Manager for the Old Faithful Inn in Yellowstone National Park.

Chef Jeff believes the freshest ingredients prepared with care and simplicity create wonderful food.

Baker/Dessert Chef – Libbe Burchfield

Libbe's culinary experiences include serving as the assistant chef on the yacht, Dulcinea and catering for John Wayne on his yacht, The Wild Goose. Having moved to Jackson Hole with her husband in 1980, Libbe has worked at the Calico since 1992. Her daily fresh baked bread, pizza dough and delicious desserts are legendary in Jackson Hole.

Manager – Betsy Campbell

A native of Richmond, Virginia, Betsy runs the "front of the house" at the Calico. She holds a business degree from the University of Georgia and has worked in several restaurants and businesses. When not at work, Betsy enjoys skiing and running with her dog, Jake. Betsy's intellect and great people skills make her a tremendous asset to the Calico.

Jeff Davies

Originally from Chicago, Jeff has been in the restaurant business in one form or another since 1978. In 1979 after a three month bicycle ride, Jeff found himself in Jackson Hole. Having worked as a waiter for six years Jeff was able to purchase a the Rocky Mountain Oyster restaurant in the Mangy Moose building in 1985. In the winter of 1994 the Calico restaurant became available and Jeff was again in the restaurant business. Jeff remains an avid bike rider and you will often find him on a bike path with his daughter, Nicolette.

David Yoder

David Yoder moved to Jackson from San Francisco in 2000. Although having been a principle in several businesses, David had no prior restaurant experience when he purchased the Mangy Moose in 2001 with Jeff Davies. Having worked successfully as business partners at the Moose, David and Jeff decided to share responsibilities at the Calico as well and in the spring of 2005 David bought into the Calico. When not a work he can usually be found on the golf course. David's children, Ben, Alex and Samantha have each joined in by working as bussers or cashiers at the restaurant(s).

Ari Borshell

For nearly fourteen years Ari has been the most visible person at the Mangy Moose Restaurant and Saloon. As the General Manager, Ari has effectively run the "front of the house" at the Moose's main restaurant. Ari joined in the re-purchase of the Calico in the spring of 2005. As an owner, Ari brings a tremendous amount of hands-on experience to the Calico. Originally from Carson City, Nevada, Ari 's wife Julie, his mother Karen, brother Bret and sister-in-law Nicole all now live in Jackson.
